Chocolate Brownie Energy Bites

One of my favorite go to snacks to help get me through the afternoon slum has been DATES! Not only are dates full of fiber, but they are also a great food for overall mental health, and can act as a natural sweetner and contains disease-fighting antioxidants! After trying health lab's choc brownie protein ball, I knew I had to recreate it because it was way too good to have to wait until the next time I spotted them in a store! This recipe is super quick and easy to whip up and best of all? It's only FIVE INGREDIENTS! Not to mention they are super delicious! Who knew health could taste this good!?


Chocolate Brownie Energy Bites

Makes 9-10 Energy Bites



Ingredients

- 1 cup of pitted dates

- 2/3 cup of cashews

- 1/3 cup cacao powder

- 2 tbsp maple syrup

- desiccated coconut


Instructions

1. Soak dates in a bowl of warm water for about 10 minutes.

2. After soaking them, add the dates into a food processor and blend until smooth (I used a spatula to help me).

3. Add in the cashews, cacao powder, and maple syrup and blend until a crumbly/doughy consistency forms.

4. Form the dough into round balls and roll in desiccated coconut to top.

5. Enjoy!


Note: store in an airtight container and keep refrigerated for up to one week or in the freezer for up to one month.
